Recipes taken from Flat-Out, Dirt-Cheap Cookin' by Bruce Carlson

  Apple Crisp
  3/4 C. sugar
1/2 tsp. cinnamon
1-1/3 C. brown sugar 
1/2 C. butter 1 C. flour
  Slice peeled apples in a pie pan half full. Spread sugar and cinnamon over them. Mix flour, brown sugar and butter together. Spread over apples. Bake 375 for 30-40 minutes.


  Apple Fritters
  1 C. flour
1-1/2 tsp. baking powder
1/2 tsp. salt
1 egg (beaten)
1/2 to 3/4 C. milk
1 T. melted margarine
1 T. sugar
1 C. peeled and diced tart apples
  Sift dry ingredients together. combine rest of ingredients and add to the dry mixture. Use enough milk to make good consistency batter. Deep fry at 365-375. Should take about 5 minutes. Sprinke with powdered sugar.


  Green Apple Pie
   4 C. greeen apples (peeled and sliced)
1/2 tsp. cinnamon
1/4 tsp. nutmeg
 1 C. sugar
Lemon juice (few drops)
Butter (few dabs)
   Place peeled and sliced apples in unbaked pie shell. Add sugar, nutmeg, drops of lemon juice and dabs of butter. Place unbaked top pie crust on and bake in moderate oven.
